Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 jalapeño pepper, diced
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon dried oregano
- 4 cups low-sodium chicken broth
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (4-ounce) can diced green chiles
- 1 cup frozen corn
- 2 cups cooked shredded chicken
- 1/4 cup chopped fresh cilantro, plus more for garnish
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Tortilla strips, for serving
- Shredded cheese, for serving
- Sour cream, for serving
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion, jalapeno, and garlic and sauté for 5 minutes, until the vegetables are softened. Add the cumin, paprika, chili powder, and oregano and cook for 1 minute more. Add the chicken broth, tomatoes, black beans, chiles, corn, chicken, cilantro, salt, and pepper and bring to a boil. Reduce heat to low and simmer for 15 minutes.
To serve, ladle soup into bowls and top with tortilla strips, cheese, and sour cream, if desired. Sprinkle with fresh cilantro and serve. Enjoy!
