  • 1/2 cup chopped fresh cilantro
  • 2 cups shredded Mexican cheese blend
  • 1 (12-ounce) package corn tortillas
  • 1 (10-ounce) can enchilada sauce

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add onions and garlic and saute for 2 minutes. Add cumin, chili powder, oregano, paprika, salt, and pepper and stir to combine. Cook for 1 minute.
  3. Add black beans, corn, green chilies, tomatoes, and cilantro and stir to combine. Cook for 4 minutes, stirring occasionally.
  4. Add 1/2 cup cheese, stirring to combine. Remove from heat.
  5. Wrap tortillas in a damp paper towel and microwave on high for 1 minute. Place a spoonful of the bean mixture onto each tortilla, roll up, and place seam side down in the baking dish.
  6. Pour enchilada sauce over the top of the enchiladas and top with remaining cheese.
  7. Bake in preheated oven for 20 minutes or until cheese is melted and bubbly.
  8. Serve with your favorite toppings, such as sour cream, guacamole, or pico de gallo.
